1st place recipe contest: Ofenschlupfer by Peter
Ingredients:
- 4 - 5 Schnitzer Organic Panini Classic
- 4 stalks of rhubarb
- 250g strawberries
- 3 eggs
- 100 ml milk
- 100 ml cream
- 70 g flaked almonds
- 25 g butter
- 1 tbsp cornstarch (gluten-free)
- 100 g sugar
- 1 packet vanilla sugar
Preparation:
- Remove the Organic Panini Classic from the packaging. Do not bake them, as they soak up the liquid better when soft - it is great that they are ready to eat even without baking.
- Cut the rolls into coarse cubes.
- Cut the rhubarb and strawberries into small pieces.
- Place the bread cubes with the strawberries and rhubarb into a casserole dish.
- Whisk the milk, cream, sugar, vanilla sugar, 1 tbsp gluten-free cornstarch, and eggs well with a whisk.
- Pour over the rhubarb-brioche mixture and mix well.
- Place into a buttered casserole dish, sprinkle with flaked almonds, and bake in a preheated oven at 200°C (fan-assisted) for approx. 30 minutes.
- After the first 20 minutes, drizzle some melted butter over the top bread cubes. Let it cool down a little before serving.
Enjoy warm or cold! A bit of creamy yogurt or vanilla ice cream is especially delicious with this "Ofenschlupfer"! A fun name for a truly wonderful, simple, sweet casserole!
